Keto Avocado Egg Toast
I have found a new keto bread substitute, and I am obsessed!
Have you tried cauliflower thins? Trader Joe’s makes them if you have one near you, and so does Outer Aisle Gourmet that you can get in tons of other stores like Whole Foods or order on Amazon! (not sponsored, just sharing what I love!)
They have a really mild flavor, and remind me of a thin flat bread. Sort of like a pita without the pocket. 2 thins only have 1 net carb! The usage possibilities are endless!
For breakfast I’ve been loving making these keto avocado egg toasts using them. This is a must make!
Keto Avocado Egg Toast
Ingredients
- 2 Cauliflower Thins Trader Joe's makes one, or Outer Aisle sells them on Amazon!
- half a small avocado⠀
- 1 tablespoon ghee⠀
- 2 eggs⠀
- 1/8 cup tomatoes chopped⠀
- micro greens⠀
- kosher salt⠀
- 2 slices of bacon cooked
Instructions
- Toast the Cauliflower Thins in the toaster. PRO TIP! I put my toaster on it's side so the thins stay flat. Otherwise they kind of sag down as they're toasting if you keep the toaster upright.⠀
- Mash the avocado on each toasted Cauliflower Thin using a fork. Season the mashed avocado with kosher salt.⠀
- Scramble your eggs in ghee, then add on top of the toasts.⠀
- Top with chopped tomatoes and micro greens. Serve with 2 slices of bacon.⠀
